Магия зелени и лавровых листьев: кулинарный вечер в ереванском доме Бывают путешествия, где главное — не достопримечательности, а ощущения. Для меня таким стал один вечер в Ереване, на кулинарном мастер-классе в доме у удивительной женщины. Это даже не мастер-класс, а приглашение в гости. Дом, пахнущий теплом и старыми книгами, стол, застеленный узорчатой скатертью, и хозяйка, Ирина, чья улыбка разгоняла всю возможную скованность за секунду. Готовили мы знаменитую армянскую лепешку с зеленью — женгялов хац. И все это под легкую, льющуюся беседу о жизни, о традициях, о семье. Оказалось, что когда руки заняты делом, а сердце и ум — приятным общением, готовить становится невероятно легко. Мука, вода, соль — и вот уже в ладонях рождается мягкое, послушное тесто. А вот и главная героиня — зелень. Это была не просто зелень, а целая симфония оттенков и ароматов. Яркий, почти изумрудный шпинат, нежно-зеленый укроп, кинза с характерным пряным духом, зеленый лук и что-то еще, но я не скажу вам что чтобы вы удивились, придя в гости у Ирине. Зелень была настолько свежей и сочной, что, нарезая ее, казалось, режешь сам армянский солнечный день. Этот чистый, пронзительный запах зелени — аромат лета, гор и жизни — был основой всего. Когда наши лепешки подрумянивались, атмосфера стала настолько домашней и уютной, что хотелось замедлить время. Но самый волшебный момент ждал в конце. Ирина принесла небольшой мешочек листьев лавра. «Есть один маленький секрет, — сказала она, раздавая листики. — Лавровый лист — это не только для супа. Это послание». Мы взяли ручки и на шершавой поверхности аккуратно выцарапали самые заветные желания. Каждый оставался наедине со своей надеждой. — А теперь, — прошептала хозяйка, — доверьте свое желание огню. Листья на секунду вспыхивал ярким пламенем, выпуская в воздух густой, сладковато-горький дым, и превращался в пепел. Ритуал загадывания желаний оказался не театральным действом, а чем-то очень личным, тихим и искренним. Казалось, что с этим дымом твое желание уходит прямо в небо, становясь чуть более реальным. А когда мы сели за стол, чтобы попробовать наше творение — хрустящую, золотистую лепешку с изумрудной начинкой, — я поняла, что мы съели не просто еду. Мы съели историю, тепло этого дома и маленькую частичку веры в то, что желания, загаданные с таким трепетом, обязательно сбудутся. Этот вечер в Ереване я увезу с собой не в фото, а в запахах: свежей зелени, горячего хлеба и священного лаврового дыма. Огромная благодарность волшебной хозяйке за вечер, который был больше, чем просто кулинарный мастер-класс! Это было погружение в атмосферу армянского гостеприимства, где готовить учат сердцем. Описание
«Женгял» по-армянски — зелень, а «хац» — это хлеб. Я расскажу историю этого блюда, научу вас выбирать правильную зелень и замешивать тесто. И конечно, покажу, как готовить женгялов хац. Едят лепешки непременно горячими: и вы обязательно их продегустируете!
Что вас ожидает
Чем больше зелени — тем лучше
Женгялов хац — традиционное армянское блюдо, которое готовят из теста и самых разных трав: кинзы, щавеля, укропа, петрушки и даже дикой крапивы. Зелени должно быть очень много — я расскажу вам, как её выбирать, как составить правильный букет из трав, и поделюсь историей появления этого блюда.
Так просто и так вкусно
Раскрываем секреты приготовления! Я научу вас замешивать тесто и тонко его раскатывать, правильно раскладывать начинку и защипывать края. А затем вы сами попробуете приготовить несколько лепёшек и мы обжарим их на раскалённой сковороде.
От свежеиспеченных лепёшек идёт такой чудесный аромат хлеба и зелени, что удержаться и не попробовать просто невозможно. И мы обязательно продегустируем их с таном или с вином.
P.S. Когда мы замесим наше тесто, его нужно будет оставить «отдыхать» на 15-20 минут. В это время мы приготовим бонусный легкий, вкусный, полезный зелёный салат из шпината.

Честно говоря, армянский хлеб с зеленью впервые попробовал только этим летом, но уже считаю одним из любимейших блюд. Благодаря Ирине мы попробовали вкуснейший женгялов хац, приготовленный своими руками. Мастер-класс оправдал все наши ожидания и мы рады, что выбрали эту активность, но далеко за пределами наших ожиданий было дружелюбие и гостеприимство Ирины. Отмечу уровень подготовки: отборная зелень намыта и просушена, полы намыты до блеска, для застолья подготовлены фрукты, тан, вино, сладости. Мы уверены, что вернемся к Ирине для новых встреч потому что приобрели в ее лице невероятного друга, который дарит радость и делится положительными эмоциями, а с ней хочется делиться в ответ. Мы провели вместе существенно больше времени, чем планировали: общались, пили кофе, даже провели небольшой ритуал по загадыванию желаний. Эти несколько часов станут точно лучшим воспоминанием о путешествии в Армению.

Очень советую этот мастер класс!Ирина,как давний добрый друг,с которым встретились,общались,готовили,говори о жизни.Получилось очень душевно,вкусно и "тепло".У всех была возможность лично приготовить блюдо,месить тесто,потом все дружно кушали,общались,пили вино.Было здорово!Обязательно посещу еще

Огромное спасибо Ирине за такой замечательный кулинарный мастер-класс! Душевно, атмосферно, по-домашнему познакомились с процессом приготовления одного из национальных армянских блюд. Каждый этап процесса продуман, Ирина подробно все рассказывает и показывает. Ирина угощает домашним таном, вином, салатом, свежесваренным кофе. Также подарила нам сувениры на память. Мы в восторге! Три часа пролетели незаметно!
