Все, кто хоть раз бывал в Кисловодске, хотя бы один раз пробовали местную выпечку - хычины. Хычины бывают разными: карачаевские (жареные) и балкарские (печеные) с различными начинками. Нам всегда было интересно как их готовят местные хозяйки. И вот на глаза попался мастер-класс по карачаевским хычинам и мы сразу же записались. Мастер-класс проходил в доме карачаевской семьи в поселке Учкекен. Хозяйка дома Суира очень интересно, подробно и доходчиво рассказывала и показывала все тонкости приготовления хычинов, а мы потом осваивали все это на практике. Не все получалось идеально, но Суира всегда помогала исправлять наши ошибки. Готовили мы хычины с картофелем и сыром и с мясом. Оказалось, это две разные технологии. В завершении всего мы пили чай с хозяйкой дома и с собственноручно приготовленными хычинами, а также хычины нам завернули с собой. Вообщем, мы отлично провели время: было весело и по домашнему тепло и уютно. Очень интересно общаться с коренными жителями, узнаешь много нового и интересного. провела время на мастер классе по кавказской кухне! Все очень подробно, просто и наглядно. Огромное, от всего сердца, спасибо хозяйке дома Суире - она просто молодец, все подробно объясняет, уделяет внимание каждому, очень душевный человек. Мы чувствовали себя как дома. Настоятельно рекомендую данный мастер-класс.

Попали на мастер-класс к замечательной хозяйке Альмире, которая обучает детей русскому языку, а в свободное время творит чудеса и учит этому желающих. Не иначе, как чудом, нельзя назвать хычины, которые появляются на еë прекрасно оборудованной кухне. Нам раскрыли секреты изготовления самых вкусных хычинов, продемонстрировали приёмы работы и разрешили поучаствовать в приготовлении этого национального блюда. Потом была дегустация, после которой мы дружно решили, что вкуснее хычинов мы нигде не пробовали! Отдельно стоит отметить, что нам рассказали, как правильно есть хычины! Вместе с хычинами нас угостили домашней сметаной и чаем. Водитель был очень понимающий (мы были с годовалым ребенком), рассказал много интересного о карачаевцах и регионе. Однако забирал нас и привез на противоположную сторону улицы, поэтому нам пришлось с коляской и ребёнком переходить через дорогу, хотя можно было припарковаться и прямо у входа в наш дом. Рекомендуем всем пройти мастер-класс от настоящего мастера!

Расскажу все по прядку. В назначенное время у места нашего проживания нас встречали на машине Ольга и Амин. Первым приятным сюрпризом было бонусное предложение посетить Гору - Кольцо. Это очень красивое творение природы с трогательной легендой о его происхождении. У подножья горы большая площадка с кафе и мини-рынком сувениров. Украшает эту площадь скульптурная композиция из легенды о происхождении Горы-Кольцо. Если подняться по дорожке до кольца, то наградой будут красивые виды. Насладившись видами и пройдя по рынку мы поехали дальше. Всю дорогу мы были окружены заботой Ольги и Амина и слушали интересный рассказ об истории региона. По дороге нас ждал еще один сюрприз, это посещение Чайного домика. Это и магазин и дегустация ароматного чая и разнообразного варенья. Попив чаю и попробовав варенье, мы поехали дальше. Дом наших гостеприимных хозяев находится в Карачаево-Черкессии — в селе Учкекен. Необыкновенное душевное тепло и комфорт мы почувствовали с первых минут знакомства. Хозяйка дома Суира вместе с сестрой Халимат рассказали и показали нам секреты замешивания теста. Сначала мы подготавливали для выпечки хычины с картофелем и сыром. Не буду раскрывать всех секретов, но это очень увлекательно и дома в этот процесс можно вовлечь всю семью, каждому найдется дело. Вот мы подошли к процессу раскатки хычина. Берем два предварительно подготовленных шарика - один из теста, другой из начинки. Путем не сложных, но годами отработанных специальных действий эти два шарика превращаются в большой хычин. Размер его чуть меньше сковородки. Суира и Халимат очень по–доброму, интересно, доходчиво и пошагово объяснили и показали процесс. И вот у нас получился сделанный своими руками первый румяный хычин, обжаренный в кипящем масле. Следующий вид, это хычины с мясом. Это совершенно другая технология подготовки. Открою маленький секрет, вы станете художником по вырезанию хычинов из теста. Это очень необычно, увлекательно и красиво. После обжарки последнего хычина мы все вместе сели за стол пить чай с ароматнейшими, хрустящими, сочными, вкуснейшими хычинами. Мы еще попробовали карачаевский сыр и говяжью колбасу, все эти вкусности сделаны по народным традициям в этом селении. Время пролетело не заметно и не хотелось расставаться. Мы уезжали от гостеприимных хозяев с новыми знаниями и опытом, в прекрасном умиротворенном настроении. И конечно с ароматными, вкусными хычинами. Ольга и Амин постоянно опекали нас в поездке, мы были в добрых заботливых руках. Много фотографировали и на следующий день мы получили еще один сюрприз, видеоклип о мастер-классе. Хотим сказать огромное спасибо Амину и Ольге за дружелюбную атмосферу и безупречную организацию этой поездки, и Суире и Халимат за теплый, душевный прием и полученные знания и опыт.
