Описание

Истории со вкусом — вот о чём эта программа. Сначала пройдём по гастрономическим адресам Минска, а затем продолжим в кулинарной студии. Здесь, в сопровождении шеф-повара, вы примете участие в мастер-классе — но не просто приготовите блюда, а почувствуете логику, эстетику и характер аристократического стола 19 века. Будет и дегустация — в правильной последовательности и с историческим контекстом.

Экскурсионная часть

В первой части программы вы:

  • узнаете, где располагались знаковые рестораны Минска губернского
  • разберётесь, чем шляхетская кухня отличалась от крестьянской
  • поймёте, кто и когда привёз в Беларусь западноевропейские гастрономические традиции
  • увидите, как из ограниченного набора продуктов родилась самобытная национальная кухня — благодаря фантазии и любопытству

VIP-мастер-класс в кулинарной студии

Вторая часть программы проходит в уютной кулинарной студии, полностью закрытой под вашу группу. Это не показательное шоу, а полноценная совместная работа с шеф-поваром.

Мастер-класс начинается с приветственного дринка — ратафии крепостью 25–30%. Это самая изысканная и дорогая наливка своего времени, приготовленная по рецепту 1795 года.

Далее — кулинарная практика с исторической составляющей. Вы будете готовить и параллельно слушать «вкусные» истории от шефа — единственного в Беларуси исследователя шляхетской кухни.

Вам нужно будет заранее выбрать три блюда — по одной позиции из каждой подачи. А выбор действительно королевский!

Первая подача

  • Картофельный суп тертюха с грудинкой — объект нематериального культурного наследия
  • Ячневый суп с курицей, яйцом пашот и гренками с маслом гарни — рецепт 19 века, меню Радзивиллов
  • Салат из ярких овощей с мягким сыром и ростбифом под зелёным радзивилловским соусом — рецепт 19 века
  • Настоящие белорусские драники с зеленью и сметаной

Вторая подача

  • Стейк по-радзивилловски из свинины со сливочным соусом, пряными яблоками и копчёной грудинкой — рецепт известен с 16 века
  • Форель по-шляхетски с белым вином, травами и лимоном на подушке из пряных овощей, гарнир — картофельный гульбишник
  • Курица с яблоками и черносливом с подачей в вырезанном яблоке — будет дополнительный мини-мастер-класс по карвингу
  • Говядина по-радзивилловски в красном вине с овощами, гарнир — гульбишник с зеленью и икрой

Третья подача

  • Груша по-радзивилловски с карамелизированными грецкими орехами, сыром с голубой плесенью и мороженым
  • Десерт Огинского со взбитыми сливками и орехами с секретным ингредиентом
  • Миндальный торт по рецепту 1854 года со взбитыми сливками и марципанами, которые вы приготовите сами
  • Ягодная кулага со взбитыми сливками и карамелизированными овсяными хлопьями — древний народный десерт с тысячелетней историей

  • Мастер-класс по исторической белорусской кухне пройдёт в одной из кулинарных студий Минска
  • В стоимость входит сопровождение шеф-повара на мастер-классе и полный набор продуктов на 2-3 блюда
