Описание
Асадо для аргентинца — это не просто барбекю. Это религия, воскресный ритуал и лучший способ общения. На мастер-классе вы узнаете, почему здесь не используют жидкость для розжига и как определить готовность мяса без термометра. Мы будем жарить, пить мальбек и говорить о жизни, как настоящие порменьос — жители Буэнос-Айреса.
Что вас ожидает
Теория огня
Всё начинается не с мяса, а с огня! Вы научитесь правильно подготавливать угли (только дрова, никакого угля из пакетов!) и распределять жар по парриже — аргентинскому грилю. Я расскажу о «святой троице» асадо: соль, жар и терпение.
Разделка и подготовка
Мы разберём классические аргентинские отрубы. Вы узнаете, как правильно солить мясо (и почему крупная соль — единственно верный вариант). И как подготовить субпродукты — знаменитые achuras, без которых не обходится ни одно застолье.
Соус чимичурри
Пока мясо жарится, приготовим самый известный аргентинский соус. Вы откроете секретные пропорции трав и специй, которые нужны для создания того самого вкуса.
Финал программы — большой обед (или ужин)
Соберёмся за столом, продегустируем приготовленное вами мясо с гарнирами и вином. И сполна насладимся результатом!
Пример меню
- Стартер — сыры, салями, оливки и вермут
- Первая подача — колбаски чоризо, морсилья (кровяная колбаса) и сыр проволета на гриле
- Главное блюдо — 2–3 вида мяса (например, ojo de bife — рибай, entraña — диафрагма, tira de asado — ребра)
- Гарнир — салат с рукколой и пармезаном, овощи на гриле
- Напиток — аргентинский мальбек (безлимитно)
