Описание

Представьте: вы расположились в уютном саду в тихой части Еревана. Аромат фруктовых деревьев и сухих дров, бокал терпкого арени и мясо, которое мы вместе выбрали и только что подготовили: добавили крупную соль, лук, сумах. По седому пеплу определяем время, когда пора снимать шашлык с углей — и наслаждаемся его сочностью под доброе вино.

Что вас ожидает

Встретимся на оживлённом местном рынке, где я научу вас выбирать идеальные куски мяса, специи и зелень как настоящий эксперт: по цвету, аромату и текстуре.

Закупив мясо, специи и овощи, мы отправимся на автомобиле в мой частный сад в 10 мин от центра Еревана, чтобы освоить древнее искусство хороваца.

На пороге вас встретит освежающий приветственный напиток: домашний лимонад с тархуном, бокал холодного белого вина или горный чай с мятой — в зависимости от сезона.

Приступим к шашлыку

Мы не используем уголь в брикетах. Душа нашего шашлыка — это древесина вишни, яблони или абрикоса из сада. Вы узнаете, как фруктовый дым придает мясу тот самый золотистый оттенок и тонкий аромат, который невозможно повторить в ресторане.

Пока разгораются угли, перекусим мезе — фермерскими сырами и хрустящим лавашом.

Подготовим мясо для жарки. Никаких магазинных маринадов! Только старинные рецепты и техника массажа мяса с луковым соком, крупной солью и сумахом.

Я научу вас определять готовность углей по тонкому слою седого пепла и чувствовать момент, когда мясо пора снимать, чтобы оно осталось максимально сочным.

Приступим к дегустации сразу, как только мясо снимется с углей. Шашлык подаётся на постели из лаваша, пропитанного мясным соком. К нему — два–три вида локального вина.

Если порции окажутся слишком большими (что часто бывает в Армении!), я бережно упакую остатки вашего кулинарного шедевра с собой.

Организационные детали

  • В стоимость включены: все ингредиенты для шашлыка (мясо, овощи, специи, лаваш), приветственный напиток (вино/лимонад/чай) и закуски-мезе (сыры, овощи), дегустация двух–трёх сортов локального вина
  • Оплачиваются дополнительно (по желанию) сухофрукты, чурчхела и другие вкусности на рынке
  • Употребление алкоголя строго 18+
  • Можно с детьми от 5 лет. Для них предусмотрены безалкогольные домашние напитки (лимонад, соки)
  • После мастер-класса я пришлю вам в мессенджер электронную карту специй и краткую инструкцию по выбору мяса, чтобы вы могли повторить опыт у себя дома

Это был интересный опыт и приятное знакомство! За приятной беседой и вкуснейшим шашлыком, приготовленным Кареном, день пролетел незаметно, но запомниться надолго: было уютно, как дома, вкусно как в ресторане, гостеприимно, как у близких родственников! Большое спасибо, Карен!!
